Description

More than giving our best white Burgundy wines a run for their money, this is a predominantly Chardonnay constructed blend alongside a small proportion of the traditional local Grechetto grape. With its debut vintage in 1985, the Cervaro was conceived to be an age-worthy white wine which would reflect its origins in the Umbrian countryside close to the Tuscan border. One of the first Italian white wines to utilise the benefits of Malolactic fermentation, a process which contributes rich and creamy character by converting tart tasting Malic acid into the softer Lactic acid, this is a truly seminal wine. A harmonious blend of refreshing peach, citrus and apple blossom on the nose is married with luxurious buttery depth and sweet spice including vanilla leading to an incredibly long and elegant finish which just keeps on evolving.

Best known for their groundbreaking ‘Super Tuscan’ red wine; Tignanello, Marchesi Antinori can trace their winemaking heritage back to 1385. They purchased Castello della Sala, where this wine is produced, in 1940 and named their top wine ‘Cervaro’ in honour of the Monaldeschi della Cervara family who owned the property in the 14th Century. This is a wine which perfectly captures the character, elegance and complexity of the estate and delivers on the winemaker’s ambitions of creating a wine capable of developing over time. A very flexible wine to pair with food; creamy pasta dishes, a variety of appetizers and mature cheeses and our personal favourite – fish tacos, all paired superbly. 13% ABV.
