We’re very excited about our latest find, this is a medium sweet red Vermouth wine, from St Austell Bay in Cornwall no less! It makes a great aperitif over ice, or digestif with ice in place of a strong spirit. It works really well with soda as a refreshing lighter drink or spritz before a meal. Vermouth is also common in many popular cocktail recipes, this wine is perfect to make a Negroni, Manhatton or Americano. It is similar but not quite as sweet or dense as a Vermouth di Torino, the typical Italian red vermouth, and for us is more refreshing because of this. The sweet and dry white vermouth styles are popular too, either for a spritz, by themselves over ice or for cocktails such as a sweet or dry Martini.

Traditionally, vermouth is a fortified aromatised wine meaning a number of herbs and botanicals have been steeped in Eau de Vie; a neutral spirit, in this case distilled from the grape skins left over from the fermentation process and then added to a still base wine. Originally used for medicinal purposes in Asia for thousands of years, the process of blending herbs and botanicals with wine has evolved with the modern vermouths most commonly associated with Italy, though also becoming increasingly produced throughout Europe.

Knightor are a boutique winery producing small batches of still and sparkling wine alongside a range of Vermouths. The Rosso Vermouth has a rich  bittersweet finish which is balanced with vibrant fruit, spices and herbaceous character. Making use of 15 different herbs and botanicals (many of which are found in and around the small estate in Cornwall) including wormwood, sage and aniseed, there are notes of bitter orange, juniper and caramel – the latter of which is also added in the blend in order to give the Rosso its dark red hue. Traditionally seen as the Italian style of Vermouth, in contrast to the dry and lighter coloured French interpretations, the Knightor Rosso will work superbly in a Negroni due to the sweet and bitter interplay and gentle spice. Due to its refreshing acidity and rich flavour profile we would recommend this alongside a number of dishes including fruitcakes and lightly spiced Terriyaki and Sushi. 15% ABV.
