Description
This wine gives the best white Burgundy wines a run for their money. Cervaro is a blend predominantly made with Chardonnay alongside a small proportion of the traditional, local Grechetto grape, produced by the famed Antinori family from their Castello della Sala estate in the Umbria Region of Italy.
TASTING NOTE: a lovely yellow colour in the glass. On the nose: Plenty of fruit, mineral and woodsmoke. It’s a fascinating, complex wine with ripe citrus, peach and nectarine alongside the flinty notes. On the palate: It’s generous in body with lots of fruit flavours, plus a burst of vanilla, buttery brioche, and lemon curd. It finishes with a delightfully fresh, long, moreish finish. 13% alcohol by volume.
FOOD PAIRING, STORING AND SERVICE: A very flexible wine to pair with food, try with creamy pasta dishes, a variety of appetizers and mature cheeses, such as Grana Padano. But our favourite pairing is fish tacos, all paired superbly. The 2022 vintage is drinking wonderfully now but will continue to develop until 2030.
ABOUT: Best known for their ground-breaking ‘Super Tuscan’ red wine; Tignanello, Marchesi Antinori can trace their winemaking heritage back to 1385. They purchased Castello della Sala, where this wine is produced, in 1940 and named their top wine ‘Cervaro’ in honour of the Monaldeschi della Cervara family who owned the property in the 14th Century. This is a wine which perfectly captures the character, elegance and complexity of the estate and delivers on the winemaker’s ambitions of creating a wine capable of developing over time.
