This Champagne is a blend of 40% Pinot Meunier, 30% Chardonnay, and 30% Pinot Noir from one of the region’s top producers, Billecart-Salmon. A Champagne that will not disappoint, full of all the best that the region has to offer with complex, fruity, and toasty brioche flavours.

TASTING NOTE: beautiful straw yellow colour with a fine mousse. On the nose: Lively and pure, with fresh citrus and a hint of fresh bread followed by apples, stone fruit, and soft floral aromas. On the palate: It’s light to medium-bodied, fresh in acidity and fine-textured. It has enticing flavours of cherry and melon with the classic brioche and biscuity charm from the region. The finish is elegant, refreshing, fine and long. 12% alcohol.

FOOD PAIRING, STORING AND SERVICE: This Champagne makes for a great aperitif, but a classic match includes freshly shucked oysters with a few drops of lemon juice, which works perfectly! It’s ready to drink now and will continue to drink wonderfully into 2025.

ABOUT: The house was established in 1818 when Nicolas Francois Billecart and Elizabeth Salmon married and two centuries later it is under the helm of its 7th generation in Francois Roland-Billecart. It is one of the few houses in the Champagne region to remain family-owned. The house rules are that all the Champagne undergo long fermentations at cold temperatures with no malolactic fermentation. This has helped create this harmonious bubbly.
