Description
This 2021 Premier Cru is youthful, with primary, citrus-scented fruit and a firm structure from its lively acidity. It has plenty of ageing potential, but if you open it now, decant for at least an hour or two, and ensure it’s out of the fridge for 20 minutes or so before serving. Domaine du Colombier is typical of Chablis producers in that it is a family-run estate (Thierry Mothe and family grow the grapes and make the wines) with a small range of wines at all four quality levels, all from the Chardonnay variety: Petit Chablis, Chablis, Premier Cru Chablis and Grand Cru. Their Premier Cru Fourchaume is a star, better-priced than the Grand Cru, but with delicious flavour and ageing potential expected from a really great vineyard. 13% ABV.
Try with mushroom or vegetable soups such as potato and leek, or mushroom pie. Alternatively for a starter or light dish, oysters/ seafood, or if available, Gougeres (Chablis’ tasty cheese pastries). Chablis can also match very well with poultry such as chicken or turkey, undressed and with all the trimmings or with a creamy sauce that offsets Chablis typically firm acidity.
