Classic Chablis from producer Domain Jean Defaix. This 100% Chardonnay is dry, crisp, and refreshing and makes for a good aperitif as well as a versatile food match, not as complex as a Premier or Grand Cru Chablis but is extremely elegant.
TASTING NOTE: Light yellow colour with golden hints. On the nose: This has lovely, classic, fresh apple and lemon, with a slight buttered toast aroma too. On the palate: It’s a benchmark Chablis style with a light to medium body, and naturally fresh acidity giving this a crisp feel which is helped along by the very dry finish. 13% alcohol by volume.
FOOD PAIRING, STORING AND SERVICE: A versatile wine, matching turkey and chicken, most soups, or even snails if you are feeling brave! It also makes a very good aperitif too, (it seems a waste, but you can also add creme de cassis to make a kir cocktail!). Drink now or keep till end 2025 if desired.
ABOUT: Domaine Jean Defaix is managed by Jean Defaix’s son-in-law, Daniel Dampt, and his sons Vincent and Sebastian. Both Defaix and Dampt are commonly found names within Chablis which is confusing and means it’s easy to buy a different wine than intended! In fact, the Dampt family have been farming here for over 150 years, and are based in the village of Milly, just outside Chablis town itself. The family make great examples of fresh, elegant Chablis that age well, plus several delicious Premier Crus, and a plot of Grand Cru Bougros vines.
