Description
A personal favourite from the Ridge Vineyard range, this Cabernet Sauvignon is mostly from the famed Monte Bello vineyard. Along with a small percentage of Merlot (6%) this a full and flavoursome wine from one of California’s top producers.
TASTING NOTE: Attractive deep purple colour. On the nose: It’s powerful and fragrant with plenty of cherry and blackberry notes, and a hint of vanilla and spice too. On the palate: Full-bodied with notes of cassis, cedar and blackberry, and firm tannins lead to a very long finish that’s intense, inky, and deeply flavoured. 14% alcohol by volume.
FOOD PAIRING, STORING AND SERVICE: This is a firm, and elegant wine that will match with a Prime Rib Roulade, or a roast vegetable and mushroom wellington. This is great now on decanting but will last for 10-20 years if required!
ABOUT: Ridge Vineyards based in the Santa Cruz mountains (South of San Fransisco) was established in 1962. Paul Draper took up the role of winemaker in 1969 and is still involved in making wines at the winery to this day. They champion sustainable farming and winery practices. Ridge, like other California estates, received almost instant praise in the world of wine after California performed so well in the 1976 Judgement of Paris tasting – beating some of France’s most revered wines.
