Assyrtiko is the flagship grape of Greece, particularly Santorini island, whose vineyards are increasingly a focus for fine whites, and therefore for significant interest and investment. It’s an extreme climate in which to make wine, with high temperatures, dry volcanic soils and strong winds (the vines are often trained to grow within the shelter of large wicker baskets known as Kouloura, which offer some protection). But the wines are truly worth the effort! The stunning Assyrtiko wines from Vassaltis estate are made by Yannis Valambous. His wines have fresh acidity, saline notes with superb capacity to age, given their firm structure and endless flavour. This particular unoaked white is mineral, citrus and peach-scented, with honey, fresh dough and a hint of saltiness. It’s an fascinating, thirst-slaking and structured wine that takes time to open and reveal it’s huge depth of flavour. Decant (for two hours) if drinking now, or cellaring if you prefer.
