A truly delicious Champagne from Premier Cru vineyards and Chardonnay grapes to give this elegant, precise, refreshing style and citrus fruit character. This has a lovely apple and lemon aroma with flavourful lemon and yeasty, dough flavours on the medium-bodied palate plus a fresh, almost saline, juicy dry finish that the Fourny family suggest goes excellently with sushi and sashimi dishes. A quarter of the wine was aged in oak casks prior to the second fermentation in bottle, to give richness and depth to the wine.
Veuve Fourny is run by Charles-Henry and Emmanuel Fourny, the 5th generation of the family to produce wines in Vertus, in the Cote des Blancs part of Champagne. Vertus is a Premier Cru, with soils that are particularly chalky and well-exposed to the sun. This is easily a match for the well-known Champagne names, and perfect for those looking to expand from their house favourites.
