Utilising some of the best and latest winemaking technology and decades of family knowledge being passed down, the family has had great success due to these factors, creating some of the best wines from Burgundy. Here, we will look at some of the very best and most popular.

A white wine that has received high praise is the Domaine Billaud-Simon Chablis. With the family creating some great examples of Chablis since 1815, they have continued to hit the high standards they set with Chablis in 2020. The white is characterised by concentration, purity, freshness and balance. With high cellaring potential and remarkable tension, the wine is intense and aromatic with a wonderful mix of citrus fruits, mineral notes and floral notes, all Chablis signatures.

Domaine Billaud-Simon is renowned for producing Chablis, and it has become their sole focus due to its popularity, with slight changes being made for a wide range of different Chablis, such as Chablis Fourchaume and Chablis Les Vaillons.

Billaud-Simon Heritage

Founded by Charles Louis Noel Billaud in 1815, he decided to plant the first vines shortly after the Napoleonic wars to help his family’s holdings. The domaine acquired more vineyards in the 1930s due to the marriage of his descendant Jean Billaud to Renee Simon. Jean Billaud’s son, Bernard, took over the family business and ran it until its purchase by the Faiverley family in 2014. Today, Domaine Billaud Simon is managed by Domaine Faiveley with its independent winemaking team and facilities.

The region of Chablis is the most northern winemaking region in Burgundy, producing dry white wines made from Chardonnay. The soil, combined with the cooler climate, gives Chablis a distinctive and unique profile, as well as a golden-green colour. The winery now owns 17 hectares with four Grands Crus as well as Four Premiers Crus whilst also owning a few plots that are village-level vines. The estate is one of the last in the region to harvest, and with the vines being around 50 years old on average, some plots have vines around 80 years old, like in the Montee de Tonnerre vineyards.
