For those who love white Burgundy, try this! From an estate in Burgundy, the Collovray and Terrier families have moved to Limoux in the Languedoc, this 85% Chardonnay and 15% Mauzac is a fine wine that will look and taste great at the table.
TASTING NOTE: A beautiful light golden colour in the glass. On the nose: It has vibrant aromas of white flowers eg camomile and apple blossom, with a slight hint of lemon zest and wild herbs. On the palate: It has freshness followed by plenty of juicy fruits like apples and pears, and a delicate tarragon note. There is a creamy rounded finish, from time spent on its fermentation lees, with a soft, toasted hint from the French oak barrel ageing. It’s medium to full in body, dry and with medium alcohol and lovely balance. 13.5% alcohol by volume.
FOOD PAIRING, STORING AND SERVICE: A classic dish from the Limoux area is fricassee de Limoux, a pork-based stew filled with white beans, ham, and pork liver. There is also a delicious semi-firm cheese from nearby which is a favourite of ours, Ossau-Iraty. For further matches, try this alongside lightly pan-fried trout with a creamy dill potato salad. Drink now or keep till Spring/Summer 2025.
ABOUT: Altugnac is an estate in Languedoc which is owned by the same team behind Domaine des Deux Roches in Burgundy. The two estates are owned by Christian Collovray and Jean-Luc Terrier and families, and friends who share a love of wine. They established Domaine des Deux Roches in 1987 before moving their attention to Altugnac in Languedoc in the late 1990s. The property had been established years earlier with 45 hectares of Chardonnay and Pinot Noir plantings. It’s in Limoux, a cooler part of Languedoc which suits these noble grapes.
