Description
This Premier Cru Chablis from the Mothe family at Domaine du Colombier. Made from 100% Chardonnay, it’s citrus-scented with great fruit and has a firm structure from its lively acidity with plenty of ageing potential.
TASTING NOTE: This wine has a delicate golden colour in the glass. On the nose: Delicate apple, pear, lemon, and a hint of honey notes. On the palate: Medium body with fresh but not high acidity, and gentle citrus and apple fruit character. It also has a slight creaminess, a mellow texture from resting on its fermentation lees and from ageing for several years. It’s a zippy, fresh style of Chablis.
FOOD PAIRING, STORING AND SERVICE: This is a fresh, clean, and mineral-driven style of Chardonnay. Wines such as this pair wonderfully alongside cold seafood dishes such as fresh oysters with lemon and mignonette or try this next to mushroom soup, or potato and leek soup. It’s great now and you can store it till Spring 2026
ABOUT: Domaine du Colombier has been run by the Mothe family since 1887. The 55-hectare domain grows exclusively Chardonnay grapes (typical of the Chablis area) and has now been passed down through 7 generations. Today it is managed by Guy Mothe’s three sons Jean-Louis, Thierry and Vincent. The family started producing wine in 1957 when Guy Mothe made the decision to produce wine using the Chardonnay from the family vineyards that had been growing on the property.
