Description
A delightfully crisp and clean example of Chardonnay from the Chablis region of Burgundy. This is a wine with plenty of character accompanied by fresh acidity that has mellowed with age, giving a touch of honey, and gentle nutty notes alongside citrus fruit such as apple and lemon. The classic stony minerality from the Kimmeridgian clay soils below the Chablis vines is on show here, eloquently highlighting the bone dry and refreshing qualities of the wine.
Domaine Jean Defaix is managed by Jean Defaix’s son-in-law, Daniel Dampt, and his sons Vincent and Sebastian. Both Defaix and Dampt are commonly found names within Chablis which can lead to buying different wine than intended! As with most Chablis, this is versatile, going well with turkey and chicken or mushroom risotto, most soups and is also a good aperitif. 12.5% ABV.
