Description
This is a classic, delicious Chablis Premier Cru made by producer Joseph Drouhin, who were one of a few producers who re-established the region of Chablis in the 60s, after the devastating phylloxera pest meant that many vineyards were abandoned. Vaillons is the name of this specific Premier Cru. It’s one of the largest Premier Cru vineyards in Chablis, and tends to make aromatic, intense and elegant wines. Combined with the warm vintage 2023, this Drouhin Vaillons has extra fruit intensity and a slight honey note. Yum!
TASTING NOTE: As one would expect, this is an incredibly fresh and vibrant wine with notes of peach, citrus and florals. The palate is well balanced with mineral notes, ripe fruit flavours and an elegant mouthfeel. 13% alcohol with refreshing but not austere acidity. There’s a tiny hint of honey coming through on the finish. It’s very succulent and appealing.
FOOD PAIRING, STORING AND SERVICE: With natural freshness and citrus fruit flavours, this is perfect paired with any fish or salad dish, as well as lemon chicken or chicken paillard. The ideal temperature to serve at is 11-13 degrees C. Drink now or enjoy till 2030.
ABOUT: Joseph Drouhin, a Chablis native, arrived in Beaune, the heart of Burgundy in 1880 and founded the winery and negociant business which is now in the hands of his four great-grandchildren, Philippe, Veronique, Laurent and Frederic who each play a different role in helping to grow the family wine companies in Burgundy and USA. With almost 200 acres of vines in Burgundy, they organically farm their own vineyards and purchase grapes from leading growers in the Burgundy region. Vaillons is a Premier Cru close to Chablis village, on the south west side, meaning it faces to the south/east which means excellent sun exposure. It has distinctive kimmeridgian soils which are said to confer the intensity to Chablis.
