TASTING NOTE:
This fine, elegant Chardonnay has a lovely aroma of lime blossom, lemon, citrus peel and white spice. On the palate, it is fresh in style and medium in body, without the heavy/oaky notes of some traditional Australian Chardonnays. It’s crisp, dry and refreshing, with a delicious juiciness from its citrus flavour and delicate acidity. A deliciously zesty wine that, while over five years of age, could easily age another five years, gaining in more complexity and even more depth of flavour. 13% alcohol.
FOOD PAIRING, STORING AND SERVICE:
This is, despite it’s age, a fresh, citrus-scented Chardonnay with lots of structure. Pair with fresh fish and salads, or pork/pasta/chicken with creamy sauces. We’d also suggest prawn or chicken noodles, or a thai green curry which would go perfectly with the fresh lime flavour. It’s ready to drink now but you could easily keep it for another five years and watch as the flavours develop a lovely honey note.
ABOUT:
This famous estate was founded in 1969 by plant physiologist Dr Bailey Carrodus, in the Yarra Valley wine region, within Port Philip, Victoria. The grapes were harvested by hand and then chilled overnight before being pressed as whole bunches, ensuring lovely purity of aromas and a smooth, fine texture. The wine was fermented using wild yeasts and then aged for 10 months in French oak barrels and vats, 30% of which were from new oak, giving a tiny hint of spice. The wine did not undergo malolactic fermentation, ensuring the lovely freshness and juicy flavour was preserved.
