Description
This example of Chablis is from the ‘Montee de Tonnerre’ Premier Cru, which is one of the very best in Chablis, sited right next door to the Grand Cru vineyards. It shares South/Southwest aspect to the sun, with the Grands Crus, which aids ripeness, and a high content of limestone in the soil giving intensity to the wines.
TASTING NOTE: The result is a powerful, intense wine with structure and a long finish of citrus, minerals, herbs and stone fruits, that will age impeccably up to at least 8 years in half bottle. 12.5% ABV.
FOOD PAIRING, STORING AND SERVICE: This is a clean, aromatic and lively Chardonnay which is enjoyable by itself but also pairs superbly with a variety of seafood dishes. Try with mushroom or vegetable soups such as potato and leek or with a creamy sauce that offsets the typical firm acidity of Chablis. Or, if available, Gougeres (Chablis’ tasty cheese pastries). Chablis can also match very well with poultry such as roast chicken and with all the trimmings.
