This Sherry is made from the Pedro Ximenez grape and has gone through a process where the grapes are sun-dried after being picked until they are partially raisins. After, the grapes are fermented partially to maintain the natural sugars of the grape. The wine is then aged 12 years while allowing contact with the air, giving the wine an oxidative quality. The result is a deep rich walnut colour in the glass, with aromas of dried figs, raisins and dates. The palate is sweet, but very soft and velvety while being well balanced, with a very long luxurious finish. 17%ABV

The origins of Lustau date back to 1896, when Mr Jose Ruiz-Berdejo, started cultivating the vines of the family’s state,  in his spare time. With the grapes harvested he began to make wines, which were sold to larger Sherry producers in the area. In 1931, his daughter, Maria Ruiz-Berdejo Alberti, acquired a small winery closer to the centre of Jerez de la Frontera and moved all the pre-existing soleras (barrels of wine), gaining a reputation for quality and visibility. As of 1990, the Lustau name merged with Luis Caballero a Spanish family-owned company well established within the wine and spirits business, which has helped to grow both the brand and the quality of Lustau Sherries.
